A sweet protein obsession: Greek Yogurt Cake

A Perfectly Satisfying Dessert or Breakfast...


If you’re in search of a super satisfying dessert or a healthy breakfast option, look no further. This 3-ingredient Greek Yogurt Cake is low in carbs, high in protein, and fits seamlessly into any weight loss program. It’s a simple recipe, perfect for busy women who don’t have time to prepare sophisticated desserts. Plus, it’s budget-friendly!


This dessert is flourless, sweetened with Stevia (but you can use your favorite), and has ONLY 3 ingredients. It checks all the trendy boxes: 😃 High Protein, Low Carbs, Keto, Gluten-Free, and Sugar-Free. You have to try it!



Ingredients:

  • 1½ cups 0% Greek yogurt

  • 4 eggs (substitute 2 eggs with 1/3 cup egg whites)

  • 5 tbsp tapioca flour

  • 180g apples (or 200g strawberries)

  • 1 tbsp butter

  • Dash of cinnamon

  • Stevia (or regular sugar to taste – remember to recalculate the macros if using sugar)

  • 6” Pyrex bowl or round baking pan

Instructions:

  • Preheat your oven to 350°F. Spray your 6-inch round Pyrex bowl with oil and line it with parchment paper.

  • Whisk the eggs (or egg whites) and yogurt in a large bowl. Once the batter is silky smooth, sift in your cornstarch (or tapioca flour) and whisk until incorporated and smooth. Transfer the batter to your prepped pan.

  • Bake for 1 hour or until the top is puffed up and golden brown. Remove from the oven and within a minute, the top will deflate – that’s what we want.

  • Let it cool for 30 minutes, then transfer the cake to the fridge without removing it from the pan. Cool in the fridge for at least 2 hours. Remove the cake from the fridge 15 minutes before serving.

Topping:

Customize your cake with a variety of toppings:

  • Apple Topping: Peel, core, and cut the apples 🍎 into small pieces; warm the butter in a pan and roast the apples for a few minutes until golden brown but still crisp, then add cinnamon and stevia.

  • Strawberry Topping: Cut a few fresh strawberries 🍓 into thin slices and place them on top of the cake, then add fresh chopped mint as garnish.
