Burrata Sandwich

Here is a quick high-protein lunch or dinner, you will love it so much that you’ll want to make it again and again!



Sandwich

Ingredients:

-200g baguette or ciabatta, lightly toasted

-120g Cherry tomatoes

-150g Burrata cheese ( 1 small ball)

-1 tbsp Pesto mixed with 1/4 cup cottage cheese (dry Curd) 

-4 cloves Garlic

-1 Tbsp toasted pine nuts ( substitute with pepitas/pumpkin seeds)

-1 sprig rosemary

-2 tsp balsamic glaze

-Salt pepper to taste


Cherry Tomato Confit:

In an oven-safe dish, combine the garlic cloves, cherry tomatoes, rosemary, olive oil (replace with avocado oil spray), salt, and pepper.

Bake for 15-20 minutes, until the tomatoes are soft (400 F /200 C)


Build the sandwich, by cutting the ciabatta in half, spreading the pesto and cottage cheese mixture, adding burrata, topping with tomatoes and garlic confit and toasted pepitas seeds. Drizzle with balsamic reduction.
