Ingredients:
For chicken
400g chicken tenders
1/2 cup lemon juice
½ tbsp extra virgin olive oil
1 tsp sweet paprika
1 tsp dried oregano
1 tsp garlic granules
½ tsp onion granules
salt and pepper to taste
Creamy sauce
½ tbsp extra virgin olive oil
3 large garlic cloves, chopped
7 cherry tomatoes sliced in half
6 sun-dried tomatoes, chopped
3 tbsp sun-dried tomato pesto
1 tbsp flour
1 tsp dried oregano
1 tsp dried basil
½ tsp chilli flakes
150 ml table cream (18%)
2/3 cup chicken stock
200g baby spinach
28g grated parmesan
salt and pepper to taste
Instructions:
For chicken - Mix all the ingredients and marinate the chicken overnight ( or at least 4 hours). Grill or air fry the chicken until done (the internal temperature reaches 165F)
For sauce - Add the oil to a pan, add the garlic, cherry and sun-dried tomatoes, flour, and all the spices. Mix well.
Add the cooking cream and chicken stock. Mix well until combined. Add the spinach and parmesan cheese. Cook for 5-10 min. Add the cooked chicken and let it simmer for 10 min more.
Serve with cauliflower or regular rice. Enjoy!
