This is a mouthwatering vegetarian high-protein & high-fiber salad absolutely delicious! You can serve it at lunch or pair it with a side of protein, like chicken or fish!

Ingredients:

  • 250g cooked quinoa

  • 200g English Cucumber

  • 1/2 cup chopped parsley

  • 1/4 cup chopped cilantro

  • 100g chopped red onion

  • 50g chopped pepitas (roasted pumpkin seeds)

  • 250g cooked chickpeas

  • 500g chopped spinach (or 250 g massaged Kale)

  • 100g  sheep feta (or use dairy-free feta for a vegan option)

  • Juice of 1-2 lemons

  • 1/4 cup extra virgin olive oil

  • Salt and pepper to taste
